COFFEE Arabica, Co-Ferment with Kombucha

Tea and coffee have long been seen as opposites — like fire and water. But the Kombucha Ferment flips that idea on its head!

Arabica fruit were hand-pulped and washed before the secret ingredient was introduced — our in-house Kombucha, brewed from organic black tea. After pulping, the beans were submerged in Kombucha and fermented for 48 hours. In this oxygen-free environment, the Kombucha's SCOBY complex began feasting on the natural sugars of the coffee, unlocking a buffet of flavours.

Fermentation has truly been the buzz of the coffee world this year, with roasters everywhere experimenting with microbes to see what flavours they might reveal.

With the Kombucha Ferment, we found a cup of refreshing clarity, sparkling acidity, and hints of fennel.

FLAVOUR NOTES Kombucha and Fennel

BREW Pour Over (Hot and Iced)

RECIPE For a pour over, place a filter in your dripper and rinse with hot water to eliminate the taste of paper. Add 15g of medium-ground coffee. Pour 250ml of hot water (92-94°C) in slow, circular motions, starting from the centre and moving outward, allowing the coffee to bloom, and continue pouring until the desired amount of water has passed through.

NOTE The 'best brewed with' list suggests methods for the best cup, but isn’t restrictive — this coffee can be ground and brewed however you prefer.

ABOUT 2025 started with Lactic Process. Now, Maada and Pushpa are ready for their second voyage into the world of post-harvest processing — presenting the Kombucha Ferment!

Carrying out fermentation experiments deep in the jungle isn’t the easiest task — but every now and then, we’re reminded of what our Microlot Programme means beyond flavour. For most smallholder farmers, post-harvest processing feels like a distant world, weighed down by financial burdens and the fear of coffee not fetching a fair price. Yet, all it took was one taste of niche coffee processing for Maada and Pushpa to never look back.

With equal parts intrigue and curiosity, and never a hint of doubt, they walked alongside us. By the end, what emerged was not just a remarkable new Microlot, but also a deeper sense of awareness, empowerment, and freedom.

About microlots

2025 MICROLOTS The 2025 harvest has been our most experimental yet, with over 12 small, experimental lots dropping every month. This season, 21 of our partner producers worked with Asjad Ahmed and Arshiya Bose (both Q-Post-Harvest Professionals) to craft some deeply flavourful and fun Arabicas. We can't wait for you to try them!

WHY But beyond taste, the Microlot Programme is a vital part of our mission to strengthen smallholder livelihoods. Through this programme, producers can earn over 1.4x the market price, helping them break cycles of debt. One of our partner growers shared how producing the Yellow Honey coffee allows her to hold on to her harvest, preventing family members from quickly selling it off at a fraction of its value.
