COFFEE Washed Arabica

Ramprasanth produces a Washed Arabica of the Selection 9 & Sarchimor coffees, pulped to ensure each bean is free from damage, resulting in a clean cup with moderate acidity and a smooth, earthy flavour.

BREW Currently enjoying Kaati in a French Press

RECIPE Coarse grind 18g of coffee and add it to your French press, then pour in 240ml of hot water (92–94°C). Stir gently, place the lid on, and steep for 4 minutes before pressing down slowly and enjoying your brew.

NOTE The 'best brewed with' list suggests methods for the best cup, but isn’t restrictive—this coffee can be ground and brewed however you prefer.

ABOUT Kariyamal is amongst a collective of producers of Kaati and with whom we work in Palani Hills. This collective's remarkable practices — each on just 2 to 8 acres — allow Arabica coffee to grow under the shade of mostly native tree species, with little to no fencing. This openness enables wildlife to move freely through the farms, causing minimal, if any, harm to either the coffee or the animals.

WHY KAATI The majestic Indian Gaur is the world’s largest bovine. Called Kaati in Kannada, it is easy to identify in a forest — with a distinctive pair of convex horns, big enough ears that disguise them as interested listeners, an eminently ridged spine and legs many shades lighter than their big black-brown bodies. We’ve been lucky to spot them many times inside and in the jungle neighbourhoods of our partner producer’s coffee farms. Gaurs spend most of their time feeding and display a high preference in food, having favourites in grass, leaves and tree bark. Their behaviour is heavily influenced by human activity in their vicinity. Originally diurnal, they exhibit nocturnal behaviour in landscapes disturbed by humans. Their long-term survival depends on the availability of their preferred plant species for food. So, the protection of biodiversity and lands that house these native chewies is crucial!

How does Kaati taste different from your other coffees? -

The Kaati is a medium-dark roast with a distinctly earthy and spicy flavour profile. Sourced from the Palani Hills of India, it offers good body, low acidity with subtle notes of dark chocolate and roasted nuts. We enjoy this coffee in a French Press!

Are all your coffees organic? -

While not all our coffees are certified organic, every kilo we source and roast is grown without chemical pesticides, fertilisers, weedicides, or fungicides. Organic certification can be prohibitively expensive for the smallholder producers we work with, but we ensure our practices align with organic principles. You can view a lab report here.

What is the best way to store this coffee? -

The best way to store your coffee is in an airtight, opaque container kept in a cool, dry place away from direct sunlight and moisture. For optimal freshness, we recommend transferring the coffee from its biodegradable bag into an airtight canister. We suggest that you avoid storing coffee in a fridge or freezer. Moving beans in and out of the freezer every time you make coffee can introduce moisture to the beans, resulting in potential mold growth and degradation of the coffee.

Do you have light, medium and dark roast options? -

We offer a variety of roast levels, including dark, medium, and light, each highlighting unique flavour profiles. Dark roasts are rich and robust with deep, chocolatey notes, medium roasts balance natural flavours with a smooth body, and light roasts are bright and aromatic, preserving the beans' natural acidity. Whether you prefer bold, balanced or delicate flavours, we've got you covered!

Why are there white flakes when I grind my coffee? -

The light tan flakes you see are coffee chaff, a natural by-product of the roasting process. Chaff is a parchment-like layer from the centre of the coffee bean and is more noticeable in lighter roasts, as darker roasts burn off most of it. When ground, chaff appears as lighter specks mixed with coffee grounds—it’s perfectly safe to brew and won’t affect your coffee or grinder.
