Know the Harvest

PRODUCE Cascara tastes nothing like coffee! The word, Cascara, which can be translated from Spanish to mean "husk", is an increasingly popular byproduct of coffee processing. After coffee fruit is picked and pulped, the fruity pulp is dried to produce cascara, also known as dried coffee cherries.  Although it does contain caffeine, it is about a quarter of that of coffee and jampacked with antioxidants. We love coffee but we're nudging you to try a lesser known part of coffee's journey!

FLAVOUR NOTES Cascara has a unique flavour profile that’s often described as fruity and slightly sweet, with notes of hibiscus, a hint of rosehip and sometimes tobacco. Its taste can vary based on the coffee variety (we use Arabica) and processing method, but it generally has a mild, tea-like character.

How to Use

RECIPE For Cascara Tonic, brew a cascara tea like you would loose leaf tea. Let it cool, strain and refrigerate. To serve, fill a tall glass with ice, pour 90 ml (or by taste!) of the cascara brew, add the juice of half a lime, and top with tonic water. Garnish with a lime slice.

Their everyday actions — training fellow producers and mentoring youth — remind us that caring for the land is both an ancestral responsibility and an urgent necessity.

CONTEXT Cascara is typically discarded after coffee is pulped, often thrown back into the farm or into tanks. While it is organic material, the sheer volume and decomposition can pollute waterways, contaminate natural streams, and leach into the soil. When we started buying cascara, we saw an opportunity to turn waste into a circular process, making better use of this byproduct.

Are all your Field & Forest produce organic? -

Our Field & Forest produce is grown without the use of chemical pesticides, fertilisers, or herbicides. While not all items are certified organic (certification fees are prohibitively expensive for our partner producers), we follow organic practices to ensure the highest quality, sustainable produce. How long will these be good to use? -

For the best flavour and freshness, we recommend using our Field & Forest produce within 2 years from the harvest. We source in small batches to ensure that you always receive the freshest produce from the latest harvest.

What is the best way to store these? -

To maintain freshness, store your Field & Forest produce in a cool, dry place, away from direct sunlight - an airtight container in a dark cupboard will keep them at their best.
